Vegan, Gluten-Free Chocolate Bombs!

Written by Laura Bingham

I am always trying to find healthy alternatives for my children to enjoy for their snacks (and me too!) and I’m disappointed to say that quite often when I try these ‘healthy’ recipes, they are a big let down. Recently, however, I had a friend come to visit who cannot eat dairy or any gluten and I was determined to find her a sweet treat that was tasty. I experimented with some recipes before coming up with this one and it’s amazing. They are gooey, chocolatey bombs that will make you want to take one every time you pass the kitchen…

Ingredients: 150grams of pitted dates.

100grams of walnuts

60grams of cocoa powder

100 grams of vegan friendly chocolate.

One tea spoon of vanilla extract.

Add the dates, walnuts, cocoa powder and vanilla extract to a bowl. Mix them together and transfer them into a blender. Blend until it makes a gooey consistency. Try rolling some in your hands– if they stick together as a ball then it’s fine, if it’s quite crumbly then add a few more dates.

Once the right consistency, roll the mixture into little balls and put them on a baking sheet. Then transfer them to the freezer for around fifteen minutes.

Meanwhile, melt the chocolate.

Once melted and once the balls are semi-frozen, take the balls from the freezer and coat them in the chocolate. A good way to do this without getting messy is using a spoon and a fork to roll them in the melted chocolate, then transfer to a baking sheet. Once all are covered in chocolate put them in the fridge to set.
